Gnocchi & Cauliflower Casserole
Lately, I have been loving the Gnocchi Cauliflower Casserole from The Forest Feast Mediterranean book. It's great to feed a crowd and comes together very quickly with few ingredients. It's veggie-packed comfort food, and can be a great alternative to lasagna. Perfect for cold weather entertaining or even just a weeknight.
Spicy Fig Tomato Salad
This is one of the most delicious things I’ve eaten in a while and it was just a work-from-home lunch. You don’t need a recipe…it’s a free form salad with the best end-of-summer ingredients!
On a plate, scatter the following:
yellow heirloom tomatoes, cubed
fresh figs, halved or quartered
fresh mozzarella cheese, torn into pieces
a sprinkling of fresh herbs (I used basil, chives and thyme)
flaky salt, like Maldon
freshly cracked pepper
a really good olive oil, such as the Forest Feast x PRMRY finishing oil
Trader Joes Chili Crunch (obsessed with this stuff)
I recently planted a borage plant in our little garden box…those pretty small blue edible flowers. Seems easy to grow and loving the pop of color it adds!
*Make a single serving, or a whole platter to share. For one person, I used 1 medium-sized tomato, 4 figs and 3 sliced of mozzarella.

Spiralized Zucchini "Noodle" Salad
This recipe from The Forest Feast Gatherings is one of my favorites in the summer. It has few ingredients, comes together quickly and is perfect for a warm evening. I use this little hand-held spiralizer which works like a big pencil sharpener and is easy to clean. You can also find squash pre-spiralized at some markets now. Raw zucchini, who knew it was so good?! Mix it 50/50 with cooked spaghetti to make it a little heartier. Enjoy!
