In a couple weeks we are heading to Vermont for a family get-together, and I can’t wait to go blueberry picking! Curly Kale and Curly Pasta (Salad)
Pasta, Beans & Greens! Also easily made with gluten-free pasta, and can be vegan if you use a dairy-free pesto. This is a good one for entertaining because it’s easy to make ahead and great warm or at room temperature.

Fava Feta Salad
Spring is in full-force which means Fava Beans in my CSA farm box! If you get them whole and fresh, they are a bit of work, but totally worth it. (One pound of fresh favas in the pod will yield about 1 cup shucked.) I have been eating them for lunch, mixed with feta, mint, sunflower seeds and avocado. If you can’t find favas, you could substitute edamame beans. Enjoy!
Roasted Rosemary Potato Salad

Brussels Sprouts Caesar Salad
Brussels Caesar! A tasty Caesar salad with some heartier greens involved…use a mandolin to shred the Brussels sprouts, or simply cut them into very fine slices. Toss all with your favorite Caesar dressing and enjoy!
