Our little meyer lemon tree on the deck was a wedding gift a little over a year ago.  It’s second season has produced a whopping 5 lemons that are just ripening now! I squeezed one on some lightly sauteed carrot ribbons, and with a touch of olive oil, basil and Maldon sea salt, it was delish! This dish is great warm or at room temperature.

Beet Haroset for Passover

For those of you planning your menu for Passover - or for anyone looking for a quick, tasty appetizer idea- here’s a fun and colorful twist on the traditional Jewish dish, haroset. Haroset is usually a blend of fruit and nuts made during Passover (which starts a week from today). Sometimes chunky, sometimes smooth, it’s often served on matzoh crackers. I replaced the usual apple with beets to rosy things up! It’s a sweet nutty spread, so the radishes on top add a nice bitter balance.

If you’re having an Oscar Party this weekend and want to make something quick and tasty, spice up some popcorn with this simple recipe. Just put all the ingredients in a big plastic produce bag and shake-em-up!  I made another batch using my homemade Garlic Herb Salt. This Smitten Kitchen Spicy Caramel Popcorn Recipe also looks delish!

A couple other appetizer ideas:

Asparagus tart - with brie on a store-bought puff pastry. Soooo simple (and impressive!)

Zatar Flat Bread - pizza dough dusted with Middle Eastern spices and dipped in greek yogurt

Stuffed Sweet Peppers - with a filling of pesto and avocado
