Now that it’s summer, I think it’s fun to have some popsicles in the freezer in case you need a sweet treat. These are super simple and vegan! They just have chocolate Almond Milk, bananas, and almond butter. (You can also use peanut butter if you prefer.) Just blend the 3 ingredients, then pour into popsicle molds or little cups and freeze. If you don’t have popsicle sticks, you can always use a little spoon.
*This recipe makes about 6 (3 oz.) pops.

This tasty mousse recipe is from my new book, and I think it would be perfect for Passover if you are looking for a dessert idea to end your meal. I had a version of it at a friend’s house for dinner once and had to go home and recreate it! It’s SO easy, and can also be made in a bigger dish instead of individual cups. This recipe serves 4.

We recently had a house full of guests for a long weekend and I thought it would be fun to bake a coffee cake for a chilly, lazy Sunday morning. Coffee cake is great, because you can cut slices as people rouse and it’s perfect with a cozy cup of coffee or Hot Chaider. Makes me miss warmer days full of hikes and blueberry picking… I used this recipe, which was lovely and moist! The only difference is that I used half whole wheat flour, and I added sliced almonds to the crumble topping. Delicious.
Hola from Spain! To celebrate finishing the cookbook (yay!), we headed to Andalusia. We rented a little apartment in Sevilla which is such an idyllic town (have you been?). Citrus trees literally line all the streets- it’s amazing! Around every corner you’ll find another tapas restaurant, with tables scattered over cobblestones, beneath citrus trees. Even the cathedrals have citrus orchards in their courtyards! I hear this region is known for it’s orange wine, but I have yet to try it.
Inspired by all the orange trees (both here in Spain, and in the Bay area right now) I wanted to share this Orange Galette recipe. I used a mixture of navel oranges, Cara Cara oranges (the slightly pinkish ones), and mandarins. I just love the warm cozy flavors of cinnamon and citrus in the Fall. I’ll take a slice with some of that delicious Spanish table wine, please!
