Spicy Fig Tomato Salad

This is one of the most delicious things I’ve eaten in a while and it was just a work-from-home lunch. You don’t need a recipe…it’s a free form salad with the best end-of-summer ingredients!

On a plate, scatter the following:

  • yellow heirloom tomatoes, cubed

  • fresh figs, halved or quartered

  • fresh mozzarella cheese, torn into pieces

  • a sprinkling of fresh herbs (I used basil, chives and thyme)

  • flaky salt, like Maldon

  • freshly cracked pepper

  • a really good olive oil, such as the Forest Feast x PRMRY finishing oil

  • Trader Joes Chili Crunch (obsessed with this stuff)

I recently planted a borage plant in our little garden box…those pretty small blue edible flowers. Seems easy to grow and loving the pop of color it adds!

*Make a single serving, or a whole platter to share. For one person, I used 1 medium-sized tomato, 4 figs and 3 sliced of mozzarella.
