Butternut Caprese - a squash salad with mozzarella, basil, tomato & avocado. This is my favorite (and my husband’s, too!)
Farro Beet Salad - The chewy grain farro is mixed with sauteed beets, onions, garlic and beet greens.
Wheatberry Kale Salad - wheatberries are a grain like rice, but chewier. They are great at room temperature mixed with tomatoes, kale and mushrooms (or whatever veggies you have on hand!)
Shaved Rainbow Carrot Salad - served with a light citrus dressing
Persimmon Salad - with red onion, cilantro and pomegranite- also good with chunks of avocado.
Shaved Brussels Sprout Salad - kind of like coleslaw, but nuttier and healthier.
Grapefruit Edamame Salad - tart/sweet/spicy/colorful! served on a bed of arugula
Spring Kohlrabi Salad - Kohlrabi is a spring vegetable that is similar to radish or jicama. Chopped and combined with fresh peas, green onions, apples and other goodies, it’s delish.
Blood Orange Cabbage Salad - with radishes and raisins. This salad is super colorful and you can serve heaps of it in the cabbage leaves themselves.
